Revisiting My Cambodian Recipes

It's been about three weeks since I chose all the dishes for my 'Swimming to Cambodia' dinner menu, so I decided to have another look at my recipes and my shopping list, just to make sure I know what I'm getting myself into.

Appetizers include Cambodian Fish Cakes, Sweet & Spicy Pork Ribs, Ginger Chicken Wings, Pork Skewers with Coconut, Fresh Spring Rolls with Ginger Dipping Sauce, and Pickled Vegetable Medley.

The soup will be Lemongrass Broth with Chicken and Rice, followed by a salad of Marinated Seafood with Mango Salsa over Cambodian Cole Slaw.

For the main course, I have chosen Carmelized Shrimp, White Fish Steamed in Banana Leaves (Amok Trei), Vegetable Stir-Fry Medley with Baby Corn, and Jasmine Rice, with Coconut Pudding and Tropical Fruits for dessert.
