Getting a Head Start
I finished up my shopping this afternoon at my favorite little Mexican market, where I bought shrimp, fish, chicken and pork ribs, as well as fresh limes, jalapeno peppers, and three perfectly ripe mangoes. When I got home, I began a leisurely afternoon of kitchen prep that lasted until well after midnight. Over the course of those nine hours, I prepared all my dipping sauces and marinades, washed and chopped all the vegetables and seasonings, made Lemongrass Soup, Mango Salsa, and a Coconut Pudding that made me so covetous I swabbed up every last bit of it from the pan and the ladle with my fingers. Come tomorrow, I may skip dinner altogether and go straight to dessert.
