'Swimming to Cambodia' Recipes & Photos

My 'Swimming to Cambodia' Dinner & a Movie was yet another tasty success. I served a wide variety of Cambodian dishes:

Appetizers included Cambodian Fish Cakes, and Rice Paper Spring Rolls with Ginger-Lemongrass Dipping Sauce, and a crunchy side dish of Pickled Vegetable Medley. The soup was Lemongrass Broth with Chicken and Rice, followed by a salad of Marinated Seafood with Mango Salsa over Cambodian Cole Slaw.

For the main course, I chose Sweet & Spicy Pork Ribs, Ginger Chicken Drumsticks, Coconut Chicken Skewers, Carmelized Shrimp, White Fish Poached in Coconut Sauce, and Jasmine Rice, followed by Coconut Pudding and Tropical Fruits for dessert.
