Designing a Hong Kong Menu

For my 'Mr. Nice Guy' Hong Kong Dinner, I want to serve courses: A hot appetizer, a classic noodle soup, a cold item atop a bed of baby greens with an Asian vinaigrette, and for the main course, one fish dish and one poultry dish, with side dishes of stir-fry vegetables and steamed rice. For dessert, something completely different from the fresh fruit and sorbet or pudding that I've typically been serving as Act V of ThingsAsian dinners past.
