This Month's Film: A Mongolian Tale
With Rick's International Cafe in Casablanca as my inspiration, I decided to make a main course dish that represents a marriage of Middle Eastern, Mediterranean and European flavors. The recipe is a variation of a basic piccata, using chicken as the main ingredient, dredged in flour seasoned with cumin, corriander, paprika and chili powder, in a lemon caper beurre blanc. The finished dish was piquant and velvety, and was perfectly complemented by a savory side dish of lamb couscous.
