In the spirit of Kaiseki, for my Memoirs of a Geisha menu, I am not going to define the dishes beforehand. Instead, I’m going to allow the seasonal ingredients available on shopping day to inspire me. But in the tradition of Japanese cuisine, I will be serving all the classic courses, including tsukemono, sashimi, a light soup, and an array of delicate seasonal dishes.
