This Month's Film: Memoirs of a Geisha
My son Will loves eggs, especially when they’re presented as ‘tamago’, Japanese egg sushi. Usually, I make a classic omelet roll and slice it nigiri style to place over balls of vinegared rice. But instead, this time, in the spirit of a more formal ‘kaiseki’ presentation, I decided to make these delicate little egg wraps filled with sushi rice, bound with a narrow strip of nori, garnished with fine slices of scallion.
