I have spent the past 20 years in search of the perfect tempura recipe, and I wish I could say that my most recent batch was it. But alas, the quest continues. Over the years, I’ve tried countless versions of recipes from my many cookbooks and the Internet, and I’ve used commercial tempura mixes, and I’ve even experimented with my own formula. None of them quite measures up. But I am pleased to say that my tentsuyu dipping sauce was right on the mark.
