Grilled Fish with Pineapple Sauce
This Month's Film: The Rice People
This was my favorite of all the dishes on my Cambodian menu. The fish is filet of cod. I know, I know, cod isn't really a local Cambodian variety, but it is beautiful, firm, fleshy, very tasty...and was on sale.
I grilled the narrow filets of fish with no embellishment, and served them atop rings of grilled pineapple with a light sauce made from pineapple juice seasoned with ginger, garlic, nuoc mam, and a little carmelized sugar water.
