This was a subtle dish that turned out much differently from what I expected. It was based upon a classic Khmer recipe, but when I see the word 'carmelized', I think of a sticky-sweet sauce, similar to General Tso's or the typical Chinese restaurant Sweet & Sour. But the 'carmelized' element in this sauce was provided by a very diluted carmelized sugar broth that was far from sticky or sweet. But tasty nonetheless.
