Coconut Macaroons and Gingered Tropical Fruit Compote

This is a light and easy dessert. The tropical fruits are briefly simmered in pineapple juice with finely shredded ginger root, and the macaroons are simply made from shredded coconut, sweetened condensed milk and a little vanilla. They come out moist and chewy, and are a perfect accompaniment for the gingered fruit.
