When my appetite beckoned around lunchtime today, I foraged about in my fridge and found lots of leftover ingredients from my Middle Eastern menu. From them, I assembled another Mediterranean salad with romaine lettuce, tomato, feta cheese, marinated artichoke hearts, mushrooms, and calamata olives in a red wine vinaigrette dressing. A fitting farewell to my Middle Eastern menu.
