I've made several types of Asian dumplings for past Chopstick Cinema menus. For my Australian-Asian Fusion menu this month, I'm going to make Japanese-style gyoza filled with ground lamb instead of the traditional meats and vegetables. I'm still going to use the same ingredients to enhance the flavors: garlic, ginger, scallion, cabbage, and a soy-chili oil for dipping.
