Tonkatsu is one of my very favorite dishes, Japanese or otherwise. I make it a couple of times a month. In case you're unfamiliar, tonkatsu is a thender pork cutlet, dipped in egg, dredged in Japanese panko bread crumbs and deep fried to a golden brown, then served over rice with a rich brown condiment similar to A-1 sauce. For my Australian-Asian Fusion menu, believe it or not, I'm going to use ostrich instead of pork. Can't wait to see how it turns out.
