When I think of Australian fruit, the first one that springs to mind is kiwi, although it may be more closely associated with New Zealand. Nonetheless, I want to use kiwi to make a light sorbet. After all the intensely gamey meats I will be serving for dinner, there won't be much room left for anything heavy. So I think a refreshing kiwi sorbet will fill the bill.
