Probably the most important ingredients to keep on hand for Indonesian cuisine are coconut milk, sweet soy sauce, and the devilishly spicy chili pepper condiment known as Sambal Ulek.
Other essential spices include: cardamom, cinnamon, cloves, coriander, cumin, curry leaf, kaffir lime leaves, lemongrass, nutmeg, palm sugar, pandan leaf, pepper, salam leaf, shrimp paste, tamarind, turmeric, and vinegar.
And for fresh flavoring ingredients: basil, chili peppers, coconut, cilantro, candlenuts, peanuts, shallots, garlic, ginger, and galangal (young ginger).
