Roasted Vegetable Medley with Balsamic Vinegar
This Month's Film: Ushpizin
This colorful salad is both beautiful and delicious. The vegetables were coated with olive oil and roasted. Then chopped, dressed with balsamic vinegar, and chilled. I served them as a salad, but they would also make an excellent side dish for the entrée.
