Stuffed Acorn Squash

The Sukkot celebration often features filled or stuffed foods, so in keeping with that tradition, I chose to fill acorn squash with a savory breaded stuffing made with onions, bell peppers, mushrooms, celery, garlic, marjoram, and homemade bagel bread crumbs. I moistened the stuffing with good chicken stock, and roasted the stuffed squash for about an hour. A tasty and beautiful dish.
