This Month's Film: Woman in the Dunes
If there is one dish that best represents Osaka cuisine, it's definitely okonomiyaki. These griddle-fried pancakes are made with a simple flour, egg, and water batter, mixed with shredded cabbage and various vegetable, meat, and seafood fillings.
For mine, I used scallions and shrimp. They fried up golden and tasty, and I drizzled them with the traditional rich, brown sauce, Kewpie mayonnaise, and a topping of beni shoga (pickled red ginger). An excellent main dish for an Osaka-style Japanese dinner.
