I have several good Indian cookbooks on my shelf, including Madhur Jaffrey's Quick and Easy Indian Cooking, the Cooking of India from the TimeLife series, and Ajanta: Regional Favorites of India, by Lachu Moorjani. And the Raffles Hotel Cookbook has quite a few Indian recipes. But after researching the cuisine of the state of Bihar, I have found that none of the recipes in my cookbooks are from that specific region, which has its own unique dishes and spices. So...tomorrow, it's off to the Internet.
