Bihari Spinach Cakes
This Month's Film: A Passage to India

This was a remarkably simple yet delicious and beautiful vegetable side dish. To prepare it, I made a mixture of chopped spinach, onions, garlic, green chili peppers, cumin, coriander, and an egg. I dropped the mixture by spoonfuls into a hot skillet and shaped them into flattened cakes, which I fried to a golden brown on both sides. Of all the ways I know to prepare spinach, this one will definitely become a recurring favorite in my kitchen.
