Recipe: Lamb-Filled Eggplant Rolls with Fresh Tomato Sauce

This Iraqi-style dish features thinly sliced eggplant filled with ground lamb, topped with a bright, lemony tomato sauce. For the side dishes, I served plain couscous and a salad of fresh tomatoes, cucumbers, and parsley in a lemon vinaigrette. An excellent meal to accompany an equally excellent film.
