This spicy noodle soup is popular throughout the Himalayas, and each of the mountainous countries has its own version. Although it may be made with meat, my Thukpa recipe is a vegetarian rendition with vegetable broth, tomatoes, mushrooms, potatoes, and spinach, seasoned with ginger, garlic, and an aromatic spice blend called Kopal Masala.
