While browsing a vintage cookbook from my library titled The Complete Chinese and Asian Cookbook (Marshall Cavendish Ltd. 1978), I came across a recipe for a Singaporean dish called Kapitan Curry. Since my son Will loves curry and is here for the weekend, I’ve decided to give it a try.

Using a Google keyword search today, I discovered lots of Kapitan Curry recipes to inspire me. So I’m going to formulate my own version using a synthesis of all the various ingredients from the best of the recipes I’ve gathered.
