Finding authentic Middle Eastern ingredients is definitely a challenge, especially if you live in a small town like Napa, California, where things like dried limes, pomegranate paste, reshteh noodles, and kashk are scarce to non-existent. And although there are plenty of ethnic grocers in the San Francisco Bay Area, they require at least an hour’s drive to get to any of them.

I’ve researched online sources and found a couple of possibilities, such as and, however, on short notice, I often choose recipes that don’t call for too many esoteric ingredients. With a few key spices, most any basic ingredients can be infused with Middle Eastern flair.
