After combing the Internet for Philippine fried chicken recipes, my search turned up only one that looked enticing. The rest were variations on Adobo (pictured), the national dish of the Philippines, one that I have featured on several occasions. The only other fried chicken recipe I found calls for the chicken to be simmered in water and vinegar with garlic before frying in oil.

This preparation method is just different enough that it’s got me curious to give it a try. However, I have some ideas for how to improve it without straying too far from the basic concept, so I’m going to give the dish a few twists of my own. My recipe will be posted at the end of the week, along with my Kailangan Kita film review.
