I’ve featured so many Philippine movies on Chopstick Cinema over the past six years that I’ve pretty much covered all the familiar favorites to go with them: Adobo, Pancit, Empanadas, Kinilaw, and Escabeche (pictured). So now, when I look for Philippine recipes, I always try to find something a little less mainstream.

While perusing the various Filipino recipe websites, I came across a dish called Morcon. It’s a classic beef roulade filled with ham, boiled eggs, chorizo, and pickle relish, and braised in a savory tomato sauce. Since Italian braciole is one of my favorite dishes, the Filipino version sounds fantastic and I can’t wait to give it a try.
