These light and lovely vegetable pancakes are one of Korea’s most common and popular dishes. They can be made with a variety of ingredients, both vegetable and seafood. I made mine with grated carrots, chopped scallions, sliced mushrooms, and julienne red and green peppers. The vegetables are mixed into a simple batter of flour, egg and water. They fry up quick and are served with a soy and rice vinegar dipping sauce.
