Curry Research: The Middle East
While their geographic borders are distinct, the culinary boundaries between the Indian subcontinent and the Middle East are somewhat blurred, with many Indian dishes having counterparts in Middle Eastern cuisine. The cuisines of Indian and the Middle East share similar spice palettes. The rice dishes known as Biriyani, and curry-style dishes such as Chicken Korma are native to both cultures. So, while the rich stews and flavorful kebabs of Iran, Turkey, and Afghanistan are not technically referred to as ‘curry’, they may certainly be considered curry in style and spirit.
