Rogan Josh is a Kashmiri lamb stew in a spicy red curry sauce, and there are many variations on this classic Mughal dish. In addition to lamb as the main ingredient, some recipes may include yogurt, onions, tomatoes, or ground almonds. The red curry sauce gets its color from dried Kashmiri peppers, and the addition of whole cinnamon, cardamom, cloves, black peppercorns, and bay leaves, along with ground cumin and coriander, create its richly complex flavors.
