For this week’s curry dish, I’m zeroing in on the Goa region, which was once under Portuguese colonial rule. Goa is famed for its vindaloo, a Portuguese inspired curry that was originally made with vin d’ail, the preserved meats brought over by Portuguese traders in barrels of garlic-laced wine.

The ingredient list for vindaloo includes ginger, garlic, red wine vinegar, mustard, onions, cumin, coriander, turmeric, and dried chilies.
