Tibetan curry tends to be simple, often vegetarian, with a limited palette of spices compared to those of neighboring cultures. Of the Tibetan curry recipes I’ve discovered in my research, the list of spices usually includes dried chilies, cumin, turmeric, and fenugreek, with garlic, onions, and ginger as the aromatics. Many Tibetan curries also include tomatoes and potatoes, two New World vegetables that have found their way into the Himalayan and Sub-continental diet.
