I have made a couple of Bhutanese dinners in years past, one that featured Jasha Maroo, a spicy chicken stew, as the main course. The other, a menu that included Thukpa, a hearty Himalayan soup.

For this week’s dish, I want to revisit the Jasha Maroo recipe, only with a curry-style preparation this time. So I’m going to be taking some culinary liberties, but without straying too far from the flavors of the traditional dish.
