Like the curries of their Himalayan neighbors, the curries of Nepal are hearty, spicy, and simple. The predominant flavor elements include the basics of garlic, ginger, onions and chilies, with cumin, coriander, turmeric and garam masala to add spice.

With the Buddhist population excluding meat from the daily diet, many curry dishes feature vegetables as the main ingredient. However, meat curries may include lamb, mutton, goat, or chicken. Sauces and marinades may also include yogurt.
