I’ve been making Thai curry for so long that I no longer need to research the three basic Thai curry pastes: red, yellow, green. My recipes were inspired by Martin Yan’s Asian Favorites. However there are certain ingredients that I have omitted or added, and I’ve adjusted the quantities to make my own unique Thai curry paste blends.

Once I decide on the main ingredient and the type of curry I want to make with it, I can use my basic curry paste recipe and add additional ingredients to suit my fancy.
