This week, I am venturing into uncharted waters with my first attempt at Massaman Curry, a Muslim dish that integrates Thai influences. Massaman curry is especially popular in the southern region along the Malaysian border where a significant number of Thailand’s Muslim population live.

Beef is most common as the main ingredient, however, tofu or other types of meats may be substituted. Other components include potatoes and peanuts, and the sauce is typically made with coconut milk, seasoned with cardamom pods, cinnamon, lemongrass, ginger, garlic, bay leaves, palm sugar, tamarind, and fish sauce.
