In my search for Chinese curry recipes, I discovered that they are few and far between. My collection of Chinese cookbooks yielded only a couple of recipes, and the ones I found on the Internet were equally scarce.

The few that I could find are very basic, calling for garlic, ginger, and generic curry powder as the spice, and chicken broth thickened with flour or cornstarch for the liquid. Chicken, shrimp, or beef are typical main ingredients, along with an assortment garden-variety vegetables that includes only peas, carrots, onions, and water chestnuts. Simple and straightforward.
