Japanese curry sauce is typically served in one of two ways: as a gravy for a meat and vegetable stew, or as a sauce for deep-fried meats or seafood served over steamed white rice. And since my son Will’s favorite dish is Katsu Kare, a deep-fried pork cutlet served with curry sauce, I’m going to be making my own adaptation of it for this weekend’s curry dish.
