Although I keep a tin of store-bought curry powder on my spice rack as an all-purpose seasoning for generic curry dishes, I’ve been blending my own recipe-specific curry powders for years.

In the beginning, it was an exotic mystery: the gestalt of all those aromatic spices that somehow come together to yield that uniquely familiar fragrance. But after the year I’ve spent exploring Asian curry in all its iterations, making my own curry blends has become second nature.
